STRAWBERRY PECAN BREAD

What does one do on a cold...wet...gray...May day in New England?...you give a new recipe a try...this recipe comes from Jayme... of the blog "The Coop Keeper"... Jayme's tweaked version of Strawberry Pecan Bread... unfortunately for me it is a bit to early for strawberry season here in Maine..and if the weather trend continues...meaning... cold and rainy... who knows when the berry fields will be ready...I happened to have these strawberries on hand...not local... when I saw Jayme's recipe post. Then blogger took the post away before I captured the recipe... (due to blogger issues) but luckily for me... the original post returned...


This recipe delivers a delicious moist bread....three small loaves and one large. As suggested by Jayme I added four cups of berries in place of the original two which the original recipe called for...however...I had no strawberry extract on hand...need to put this item on my grocery list...I found this to be a perfect bread to accompany strawberry cream cheese with diced berries on top...Thank you for sharing this recipe "Coop Keeper" it is the perfect afternoon snack for a cold... dreary...wet New England day...so if you have strawberries on hand I suggest you give Jayme...The Coop Keeper a visit and I promise you won't be disappointed!!

It looks delicious but I can't eat strawberries anymore after developing a severe allergy to them.

I still grow them for the family though. JB

I made this very bread yesterday afternoon! And you are right-it is the perfect snack for a cold, dreary, wet, New England Day! The recipe is flexible too-I didn't have white flour-so I used wheat and I also used almond meal instead of pecans. It was still delicious! Yum!

This looks delicious. I just love when the strawberries are ready for picking. In the mean time the California ones do the trick nicely. I have never had strawberry bread and I bet with all the moisture in strawberry the bread comes out really moist.

How can you go wrong with strawberries and pecans! I think this recipe's a keeper!

Mmmmmm... anything with fruits or berries is always welcome on a gray day! Same weather here... so I just may bake today! :-)

i have never had strawberry bread...looks great...i have to make this as i am swimming in berries out here in CA. i WAS going to bake a pineapple upsidedown cake today...but am making this instead....

Oh goodness this looks SO GOOD! And perfect timing too since our strawberry season is just starting. I'll be giving this a try for sure but I need to get some strawberry extract. I don't ever remember seeing it but then I wasn't looking for it either so I'll see what I can find. Her it is nearly 1am and now I'm hungry! Thanks ;)

This is the best bread recipe. I posted it last week on my blog. You seldom find a strawberry bread thats delicious. It was baked for my office and it was out of sight. I believe its the same. "Like minds think alike" ~ talk you again sometime. Debi

That looks really good, I'd never have thought of using strawberries in a bread recipe. Hope your weather improves, it's been similar here and I'm ready for some warm sunshine.
